Varietal: 95% Chardonnay – 5% Pinot Noir
Production Zone: Selection of grapes from vineyards in the municipalities of the Alta Langa. East and North/West exposures at an altitude of over 400 meters above sea level. Alkaline clay soil.
Harvest Period: End of August
Yield per Hector: 50 Hl / Ha
Vinification: Fermented in the typical fashion for sparkling wine – partly in steel and partly in French oak. After a year or so, the wine undergoes bottle fermentation.
Maturation: From 30 – 48 months on the lees in the bottle. Champenoise Method.
Sensory Characteristics: Floral and fragrant with persistent foaming bubbles. Aromas of dried fruit, pineapple, apple and honey. Fresh and clean in the mouth.
Service Temperature: 8 °C / 46.5 °F
Average Life of Wine: Wine of medium lifespan. It can keep for 4 years from the date of disgorgement.
Food Pairing: Great for an aperitif, goes well with cold appetizers and Parmigiano Reggiano.
Average Annual Production: 4,000 bottles + magnum 1.5 lt.
